A Distillery Designed Differently
Garden County Distillery was designed from the ground up by founder Gavin Clifford with one clear purpose: to create flavourful, characterful single pot still-style Irish whiskey.
Built to work with a wide variety of grains, including malted barley, unmalted barley, oats, wheat and rye, our distillery allows us to explore the full depth and complexity that grain can bring to Irish whiskey. To achieve this, we installed a two-vessel brewhouse, giving us the ability to carefully convert the starches in our chosen grains into fermentable sugars.
Where Craft Meets Copper
From there, the wort moves to our fermentation area, where four fermenters allow us to run a rolling 72-hour fermentation. This extended fermentation gives locally produced yeast strains the time they need to work their magic, transforming the wort into a rich, distillation-ready wash.
At the heart of the distillery are our three 1,000-litre copper alembic stills, handmade in Portugal by Hoga, a generational family-owned company specialising in traditional copper alembics. Each still is hand-beaten, meaning no two are exactly the same, and each carries its own unique registration plate on the neck.
More Grains. More Flavour.
Although we have three stills, we choose to double distil rather than triple distil. The reason is simple: Hoga’s largest still is 1,000 litres, and we were so committed to working with them that we installed two 1,000-litre stills for the first wash distillation and a third 1,000-litre still as our spirit still.
Our ethos is simple: use more varieties of grain to unlock more flavour, and use double distillation to preserve that flavour in the final spirit.
The result is a distillate that is big, robust, oily and wholly unique.
The Garden County Cask Programme
Whether you are an individual, a family, a group of friends, an organisation, a club or a corporate entity, you now have the opportunity to own your own cask of whiskey from the Garden County Distillery and benefit from the growth and global demand for Irish whiskey.
Your cask will mature in our Wicklow warehouse, where you can visit, taste, and watch your investment grow. When the time is right, you can make the decision to bottle, continue to age or sell your cask. The power is in your hands.
