From our family-run distillery in the heart of County Wicklow, we're breathing new life into Single Pot Still Irish Whiskey, the most authentic Irish tradition that once ruled the world before nearly vanishing.

Every bottle we create honors Ireland's storied whiskey heritage while fearlessly pushing boundaries with innovative cask finishes and uncompromising quality. This is whiskey with a purpose.

  • Sourcing

    We source local Irish grain from Loughran Family Brew Stores. Starting with quality raw materials gives us the best foundation for a distinctive, characterful whiskey.

  • Brewing

    Our mixed-grain mash bill demands a more complex and intensive brewing process. By working with a variety of grains, we build depth, texture, and layers of flavour from the very beginning.

  • Fermentation

    We source our fermentation yeasts from WHC Labs in Wicklow. These locally derived yeast strains help create further distinction and unlock extra fruit, spice, and complexity in the spirit.

  • Distillation

    Although we have three stills, we use a double-distillation model. Two stills work in unison as wash stills, while the third is used as the spirit still for the second distillation.

  • Maturation

    We work closely with a cask partner in Kildare with international access to exceptional wood. That gives us superb bourbon and virgin oak casks, along with rum, sherry, port, wine, and other fortified casks from around the world.
